Vacancies at the Faros Hotel Ayia Napa

Vavlitis J. Hotels Ltd, a well-established Group in the Hotel and Leisure Industry is seeking an experienced and commercially driven F&B Operations Manager to lead the opening and operation of a new independent Food & Beverage concept in Ayia Napa.

The new operation will consist of various concepts - including Gelato, Café, Italian restaurant - operating under one identity with shared indoor and outdoor customer areas.

The successful candidate will be involved in the pre-opening stage of the project and will subsequently assume overall responsibility for the day-to-day operation, commercial performance and profitability of the business.

Main Responsibilities

• Participate in the pre-opening preparation and operational setup of the new F&B concepts.
• Oversee the daily operation of the three outlets.
• Recruit, train, supervise and motivate the operational team.
• Establish operating procedures and ensure consistent standards across all outlets.
• Ensure high standards of product quality, customer service, cleanliness and presentation.
• Manage staff scheduling, productivity and labour costs.
• Monitor daily sales, transactions, average spend and performance by outlet.
• Monitor food and beverage costs, stock levels, wastage and purchasing.
• Monitor budgets, operating expenses and overall profitability.
• Identify opportunities to increase sales, improve margins and optimise the product offering.
• Ensure compliance with all applicable health, safety, hygiene and food handling requirements.
• Work closely with Group Management on the continuous development of the concept.

Candidate Profile   

• Minimum 3-5 years of relevant management experience in F&B, restaurants, cafés or similar hospitality operations.
• Degree or Diploma in Hospitality Management, F&B Management, Business Administration or a related field will be considered an advantage.
• Strong leadership and people-management skills.
• Good understanding of F&B costing, stock control, labour management and operational profitability.
• Strong commercial awareness and ability to understand and analyse sales and operational KPIs.
• Excellent organisational and problem-solving skills.
• Excellent knowledge of Greek and English.
• Good computer skills and familiarity with POS and restaurant management systems.

• Applies the default standard recipes for all dishes in accordance with the instructions of the Chef.
• Ensures timely preparation, decoration and presentation of food according to standard recipes
• Ensures that the proper implementation of hygiene guidelines is applied
• Applies the internal rules and regulations of the Hotel
• Performs any other related tasks to be assigned
